Purple evening

At an outdoor veggie market, we bought the last bag of purple sweet potatoes.
One was over 500 g: it was very big to use. So I decided to bake ‘potato bread’ for the first time, using the purple sweet potato instead of a regular potato.

I’ve only been baking bagels recently (it’s the only bread I can bake easily), so for the first time in a while I tried to bake a new kind of bread. (Bagels don’t need two rising times, so I can bake them quicker.)
Boiled the potato, kneaded the dough; the first rising, and the second rising: I seriously followed the directions.
It turned out like bread. For me, it was a good result.
When I checked how much it was done by lifting it with tongs, I made a hole on the bottom. I felt a little sad. (It’s hidden in the pictures.)

I had leftover purple sweet potato, and (not having any other good ideas) I made potato salad with it.
The potato is easy to mash up.
I ran out of yoghurt so I added the juice of a citrus fruit I got from my parents.
Then I saw it…
It changed colour to vivid shocking pink!

Later I recalled that a morning glory flower changes colour if you put it in an acidic solution.
But I was excited to see the pink salad, and took some photographs.
Well, it suddenly happened. I got surprised.
